Pumpkin Maple Granola

 
 

Skip the store-bought granola and make your own with this easy, low-sugar Pumpkin Maple Granola! It’s packed with warm fall flavor and just the right amount of sweetness—plus it makes your whole kitchen smell amazing while it bakes. Perfect for topping nonfat Greek yogurt or enjoying by the handful as a quick, crunchy snack.

Ingredients:

  • 3 cups (300 grams) Old Fashioned Oats

  • 30 grams Cinnamon (or Vanilla) Protein Powder

  • ⅓ cup (80 grams) Roasted Pumpkin Seeds

  • ⅓ tsp Himalayan Pink Salt

  • ¾ tsp Pumpkin Spice Powder

  • ¼ cup (50 grams) Coconut Oil

  • ¼-⅓ cup (80 grams) Pure Grade A Maple Syrup

  • ⅓ cup (80 grams) Pumpkin Puree

 
 
 

Instructions:

  • Preheat the oven to 340 degrees.

  • Combine the oats, protein powder, pumpkin seeds, salt, and pumpkin spice powder into a large bowl.

  • In a small bowl, heat the coconut oil, maple syrup and pumpkin puree in the microwave, or in a small sauce pan over medium-low heat, and whisk together.

  • Pour mixture over the dry ingredients and quickly mix using a spatula or wooden spoon.

  • Spread the mixture evenly onto two baking sheets.

  • Bake for 30-35 minutes, tossing a little at the halfway point.

  • Once granola is golden brown, remove and let cool completely before removing from the baking sheet.  The granola will crisp up as it cools.

  • Store in an airtight container.
