Pesto Chicken Meatballs
These Pesto Chicken Meatballs are full of fresh flavor and incredibly easy to make. With lean ground chicken, fresh basil, and a hint of spice, they’re tender, protein-packed, and perfect for meal prep. Cooked in the air fryer for a quick, golden finish, they pair perfectly with pesto, marinara, or your favorite high-protein pasta. Simple, flavorful, and versatile—these meatballs make healthy eating anything but boring.
Ingredients:
1 lb Lean Ground Chicken
Note: I like to grind my own chicken as it’s cheaper and SO EASY! I use the Kitchen Aid metal grinder attachment
1 tsp Red Pepper Flakes (more if you want a bit more kick)
½ tsp Garlic Powder
½ - 1 tsp Ground Black Pepper, to taste
Pinch of Himalayan Pink Salt
¼ cup Fresh Basil, minced
½ tbsp Garlic Infused Olive Oil
⅛ cup Coconut Flour
Instructions:
Preheat your air fryer to 375 degrees.
Combine all ingredients in a bowl and mix well.
Roll into balls and place into air fryer.
Cook for 12-18 minutes (time will vary depending on how thick you roll the meatballs).
Serve with pesto, marinara sauce or over pasta and enjoy!
