Chicken Apple Sausage

 
 

Making your own chicken apple sausage is a simple way to take control of ingredients while adding some serious flavor to your meals. It’s a healthier, more affordable option than many store-bought versions—and this sweet and savory blend is perfect for meal prep!

I like to keep it easy and cook mine ground-style for quick breakfasts, but you can also shape them into patties and store in an airtight container for a ready-to-go protein option any time of the week.

 
 

Ingredients:

  • 1 Lb Ground Chicken

    • Note: Using a higher fat percentage ground chicken, with some dark meat, yields a more moist result. However, if you are looking for a more lean option, you can always grind your own meat from chicken breasts using a Kitchen Aid metal grinder attachment

  • ½ cup Chopped Sweet Onion

  • 1 medium Gala Apple, peeled and minced

  • 1 Tsp Ground Sage

  • ½ Tsp Fennel Seeds

  • ½ Tsp Paprika

  • 1 Tsp Himalayan Pink Salt

 

Instructions:

  • Add ground sage, fennel seeds, paprika and salt to ground chicken and mix well.

  • Preheat a skillet over medium heat.

  • Add onion and cook for 1-2 minutes.

  • Add minced apple and cook for another 2 minutes.

  • Add ground chicken mixture.

  • Once the chicken has browned, remove from heat.  

  • Let cool and measure out for meal prep, or store in the refrigerator in an airtight container.

Instructions for Sausage Patties:

  • Preheat a skillet over medium heat.

  • Add onion and cook for 1-2 minutes.

  • Add minced apple and cook for another 2 minutes.

  • Remove from heat and let cool for about 5 minutes.

  • To a bowl, combine ground chicken, ground sage, fennel seeds, paprika, salt, as well as onion and apple mix. Mix well.

  • Form mixture into balls and place in preheated skillet.

  • Flatten each ball into a patty.

  • Cook approximately 3-4 minutes per side, or until browned.
