Savory & Sweet Chicken Salad

 
 

This Savory Sweet Chicken Salad is the perfect balance of flavor and convenience. It’s easy to make ahead, packs well for travel or hiking, and makes a great on-the-go lunch. With the right mix of protein and flavor, it’s a simple meal prep staple you’ll want to keep on repeat.

 

Ingredients:

  • 2 large Chicken Breasts

  • ½ cup Red Grapes, sliced

  • ⅓ cup Pecan Halves

  • ¼ cup Raisins

  • ½ tsp Garlic Powder

  • Minced Red Onion (to taste)

  • ¼ tsp Fresh-Ground Black Pepper

  • ¼ tsp Himalayan Pink Salt

  • ¼ cup Olive Oil Mayonnaise

  • ¼ cup Nonfat Greek Yogurt

 
 

Instructions:

  • Bring a large pot of water to a boil over high heat.

  • Add chicken breasts and reduce heat to maintain a steady boil.  Cook for approximately 25-30 minutes.

  • Remove chicken and place on cutting board.

  • Shred chicken using 2 forks and allow to cool a bit.

  • Add chicken to a large bowl with all of the ingredients.

  • Mix well.

  • Serve atop a fresh salad or make a healthy wrap with fresh arugula or spinach.
