Savory & Sweet Chicken Salad
This Savory Sweet Chicken Salad is the perfect balance of flavor and convenience. It’s easy to make ahead, packs well for travel or hiking, and makes a great on-the-go lunch. With the right mix of protein and flavor, it’s a simple meal prep staple you’ll want to keep on repeat.
Ingredients:
2 large Chicken Breasts
½ cup Red Grapes, sliced
⅓ cup Pecan Halves
¼ cup Raisins
½ tsp Garlic Powder
Minced Red Onion (to taste)
¼ tsp Fresh-Ground Black Pepper
¼ tsp Himalayan Pink Salt
¼ cup Olive Oil Mayonnaise
¼ cup Nonfat Greek Yogurt
Instructions:
Bring a large pot of water to a boil over high heat.
Add chicken breasts and reduce heat to maintain a steady boil. Cook for approximately 25-30 minutes.
Remove chicken and place on cutting board.
Shred chicken using 2 forks and allow to cool a bit.
Add chicken to a large bowl with all of the ingredients.
Mix well.
Serve atop a fresh salad or make a healthy wrap with fresh arugula or spinach.
